There are 2 ways I make soda's. The first way is Lacto-Fermenting. It utilizes the natural yeast in the air to ferment.
The second way is by using water kefir grains. I ordered them online (comes in a bag with about a tablespoon of grains). They multiply over time so you always have enough to share!
